Using a Big Green Egg

A ceramic kamado that grills, smokes, roasts, bakes, and more. Heat comes from natural lump charcoal; temperature is controlled by airflow through the bottom Draft Door and top rEGGulator — kept in tandem.

Burp before you open

Never yank the dome open on a hot Egg. Crack it a few centimeters (1–2 in), pause so heat and smoke escape, bounce slightly, then open fully. Skipping this can cause a flashback toward you — especially above ~300°F / 150°C.

Load and light

Use 100% natural lump charcoal only — never briquettes with binders, and never lighter fluid (taints food and can void the warranty).

1. Fuel Fill the Fire Box to about ½–2 in (≈5 cm) below the Fire Ring rim. Don’t pack it tight.
2. Starters Nest 1 firestarter (MiniMax/Large) or 2 (XL) in a well; loose charcoal teepee over it. Natural wax/wood starters only.
3. Open air Dome open, Draft Door and rEGGulator fully open ~10 minutes until starters are gone and nearby embers glow.
4. Close & climb Close the dome; keep both vents fully open. Don’t install cooking surfaces yet.
5. Surfaces When the dome thermometer is ~10°C / ~20°F below target, burp, open, install grid / ConvEGGtor / stone. Temp will dip, then recover.
6. Stabilize Trim vents in small matching increments. When the temp stops hunting, cook. Don’t poke the coals.

After lighting

Close the Draft Door mesh panel once lit to catch sparks. Never look down the top vent while the fire is going.

Temperature control

Oxygen = heat

Open both vents to raise heat; close both slightly to cool. Keep them roughly matched — if the cap is open ~1 in / 2.5 cm, the door should be too.

Draft Door sets the rough range (especially the ceiling). rEGGulator fine-tunes. Wait after each tweak — ceramics lag.

Don’t chase the needle

Food and cold surfaces drop the reading temporarily. If it was stable before you loaded, leave the vents alone — it usually recovers on its own.

Never seal both vents while cooking (snuffs the fire). After the cook, close both fully to extinguish and save leftover lump. Never use water to put it out.

Direct vs indirect

Direct — food over the coals (grill, sear, dirty cook). Indirect — ConvEGGtor deflects heat so the dome acts like a convection oven (roast, bake, low & slow, most smoking).

ConvEGGtor tip

Installing a cold ConvEGGtor can drop dome temp ~50°C / ~90°F. For a 180°C / 350°F roast, many cooks bring the Egg hotter first, then drop the plate in and let it settle.

Grilling — high heat

Best with the dome shut — open only to flip or probe. Cast iron searing grid for hard grill marks; keep pepper off until after the sear (it burns bitter).

Steak example: 250–300°C / 480–575°F. Pull rare ~45°C / 113°F internal (rest to ~50°C / 122°F); medium-rare pull ~49°C / 120°F.

Roasting — crowd favorite

Even convection + sealed moisture. Reverse sear works well: cook gentle, then open vents / remove ConvEGGtor briefly for caramelization at the end (Egg heats faster than it cools).

Roast chicken target ~180°C / 350°F dome; pull when thigh hits ~75°C / 165°F.

Baking & pizza — stone oven

Legs-down ConvEGGtor creates more headspace for high heat. Preheat the baking stone ≥20 minutes for pizza so the base crisps. Margherita-style cooks often ~6–10 minutes near 300°C / 575°F.

Longer cakes/breads around ~200°C / 400°F may use a cooler stone as an extra heat shield — follow the recipe’s stone guidance.

Low & slow / smoking

Build heat slowly. Chips = short smoke burst; chunks = longer cooks. Optional soak ~15–20 minutes. Keep a thin blue smoke — don’t choke airflow or smoke turns bitter.

Pulled pork shoulder example: ~110°C / 230°F until ~90–93°C / 195–200°F internal. Salmon hot-smoke example: ~120°C / 250°F to ~60°C / 140°F.

Fuel and smoke wood

Oak & hickory lump

All-rounder: lights fast, long burn, rich smoke — default for grilling and pizza.

Maple / eucalyptus

Maple: gentle sweet/nutty. Eucalyptus: hot, clean, more neutral so ingredients stay front-and-center.

Chips & chunks

Apple, cherry, pecan, hickory, mesquite, oak — layer flavor on charcoal. Match intensity to the protein.

Care between cooks

Every cook (or every 2–3)

Rake leftover lump so ash falls through the Fire Grate, then scrape ash out the Draft Door. Ash is the #1 airflow killer. Top up charcoal to the usual fill line and relight.

Deep clean

Occasional burn-off: run ~600°F / 315°C for 2–3 hours, then brush surfaces. Wipe exterior ceramics with a soft cloth and Egg-safe cleaner — no bleach or abrasives. Check hinge/band bolts periodically.

First cooks on a new gasket

Keep early cooks under ~350°F / 177°C so gasket adhesive can cure. If the dome freezes shut in winter, never force it — warm gently until the seal releases.
